Last Night I was craving Shrimp Fried Rice and figured I'd try to make it myself. I love to cook and had all of the ingredients in my cabinet. It was DEELICIOUS!!!!!! I posted it on Instagram and everyone loved it. Here's my rendition of the recipe. ENJOY!
Ingredients
- ¾ cup diced cooked shrimp or chicken
- ½ tsp cornstarch
- ¼ tsp salt
- 1/4 tsp white pepper
- 1 Tbl vegetable oil
- 2 eggs, slightly beaten
- 2 Tbl vegetable oil
- 1/4 cup of pea pods
- 1/4 cup of red peppers
- 1/4 cup of onions
- ½ tsp salt
- 2 Tbl sesame seed oil
- 3 cups cooked rice (preferably jasmine or basmati)
- 1 Tbl soy sauce
- 1 Tbl green onion (chopped w/tops)
- Dash of white pepper
- tablespoon of powdered chicken or beef bouillon
NOTE: Add as many different vegetables also season to taste as your cooking BUT make sure to follow the recipe to the T. The key is to cook ingredients separately first.
How to make it
- Mix chicken, cornstarch and ¼ teaspoon salt and white pepper .
- Heat wok or large skillet until hot.
- Add 1 Tbl oil (use to coat pan)
- Add eggs: cook and stir until eggs are cooked through but still moist.
- Remove eggs from pan.
- Add 2 tablespoons oil (coat bottom and sides)
- Add chicken, pea pods, red pepper, onion, and ½ teaspoon salt
- Stir fry 1 minute (more or less) depending on how crunchy you like your vegetables.
- Remove from pan.
- Add 2 tablespoons sesame seed oil (coat bottom and sides)
- Add rice; sprinkle bouillon powder over rice stir-fry 1 minute.
- Stir in soy sauce.
- Add chicken mixture, eggs, Veggies and white pepper.
- Stir-fry 1 minute or more depending on your taste.
- Add green onion the last 30 seconds of cookin
